Introducing the Zancudo Madrecuishe, a unique and rare spirit made from the Karwinskii (Madrecuishe) agave family, which is grown in the wild and harvested after 12 to 15 years years. This agave plant is cultivated in the high mountain regions of Oaxaca, with its yellow soil, as well as in the lowlands with arid terrain. The Zancudo Madrecuishe is cooked for 3-5 days in an earthen pit using Ocote (pine wood) and then crushed in a tahona mill (circular millstone). After that, it is fermented for 10-12 days in pine wood tubs and distilled twice in copper stills. This meticulous process results in a truly exceptional spirit that embodies the rich what a great Madrecusihse should be.
